Potato Batata, a lunch spot built around the potato, has opened at Maliestraat 1.
Owner Lama Yazbeck is Lebanese and came to the Netherlands five years ago, moving from Amsterdam to The Hague two years ago.
She had worked in the NGO sector at home and sold chocolate truffles on the side before returning to food.
How the menu came about
Yazbeck says she sat down with her mother and listed meals until she noticed how often potatoes came up.
In Lebanon the potato is a supporting ingredient, but the Dutch eat them almost daily and the quality is good.
The menu runs from wraps, potato salad, quiche-style pies and soufflé to a sweet potato pie for dessert.
Flavours and sourcing
The seasoning is mild rather than bold, with the tangy sauce on the wrap the liveliest thing on the plate.
Much of the food is homemade and gluten free, the meat is halal, marinated beef can be added and there are vegan options.
Around 90% of the ingredients are sourced locally.
Hours and plans
The place is open for lunch on weekdays and offers catering for events.
From November it will serve early dinners from 16:30 to 18:30, with seasonal dishes such as mashed potatoes.
